When the temperatures start to climb, the last thing any of us want to do is hover over a hot oven for an hour to satisfy a sweet tooth. As a coach, I’m always looking for ways to keep my nutrition on track—especially hitting those protein goals—without sacrificing the joy of a good dessert.
This Berry Protein "Cheesecake" Parfait has become my go-to summer staple. It’s light, refreshing, packs a significant protein punch, and tastes exactly like a decadent treat. Whether you’re fueling up after a heavy lifting session or just looking for a cool-down snack, this one hits the spot.
The Breakdown
The beauty of this recipe lies in the Greek yogurt base. By folding in your favorite vanilla protein powder, you transform simple yogurt into a thick, creamy "cheesecake" filling. It’s a perfect way to sneak in extra protein while keeping your dessert clean and micronutrient-dense.
Ingredients
1 cup Plain Greek Yogurt: Your high-protein, creamy foundation.
1 scoop Vanilla Protein Powder: Choose a high-quality whey or plant-based blend that tastes great on its own.
1/4 cup Crushed Graham Crackers: (Or, for a grain-free twist, use a quick almond flour and honey crumble).
Fresh Summer Berries: Use whatever is in season—strawberries, blueberries, raspberries, or blackberries all work beautifully.
Method
Prep the "Cheesecake": In a small bowl, whisk your Greek yogurt and protein powder together until completely smooth and creamy. If the mixture is too thick, add a tiny splash of water or almond milk until you reach a pudding-like consistency.
Layer It Up: Grab your favorite glass or mason jar. Start with a spoonful of the yogurt mixture, then add a layer of fresh berries and a sprinkle of your crumble topping. Repeat the layers until you reach the top.
The Chill Factor: While you could eat it immediately, I highly recommend letting the parfait chill in the fridge for at least 30 minutes. This gives the flavors a chance to meld and allows the crumble to soften just enough to feel like a true dessert crust.
Pro-Tip for Summer
If you're hosting a BBQ, you can prep these in individual small jars ahead of time! They look beautiful, they’re easy to serve, and your guests won't even realize they're eating a high-protein, macro-friendly dessert.
Enjoy the sweetness of summer, and keep fueling your body with intention!
