When the holiday rolls around, it’s easy to feel like you have to choose between enjoying the festivities and staying on track with your nutrition. But the truth is, you don’t have to sacrifice one for the other!
I’m a huge believer in finding ways to make our favorite treats work for us, not against us. If you’re looking for a dessert that’s refreshing, festive, and keeps your protein intake front and center, this Patriotic Greek Yogurt Cookie Cake is about to become your new summer go-to.
Patriotic Greek Yogurt Cookie Cake
This recipe is the perfect balance of a chewy, satisfying base and a light, creamy, protein-packed topping. It’s colorful, delicious, and easy to share.
Ingredients:
For the Base:
1 cup whole wheat pastry flour
1 cup rolled oats
1/2 cup cane sugar
1/4 tsp salt
1/4 tsp baking soda
3 tbsp melted coconut oil
6 tbsp unsweetened vanilla almond milk
For the "Frosting" & Topping:
1.5 cups vanilla Greek yogurt (full-fat provides the best texture!)
1 cup fresh blueberries
1 cup fresh strawberries, sliced
Instructions:
Prepare the Base: In a mixing bowl, whisk together the flour, oats, sugar, salt, and baking soda. Stir in the melted coconut oil and almond milk until a dough forms.
Bake: Press the dough into a greased 11x7 inch pan. Bake at 350°F for 25 minutes, or until the edges are golden brown. Important: Let the base cool completely before moving to the next step.
Frost: Once the cookie base is cool, spread a thick, even layer of vanilla Greek yogurt over the top.
Decorate: Get creative! Arrange your blueberries and strawberries in a flag pattern to give it that perfect 4th of July flair.
Serve: Keep it chilled until you're ready to serve, then slice and enjoy!
Why It Works
By using Greek yogurt as your "icing," you’re swapping out heavy, sugar-laden frosting for a boost of high-quality protein. It keeps the dessert feeling light and refreshing for a hot July day, while still giving you that creamy, indulgent texture we all crave.
This is the kind of treat that proves "healthy" doesn't mean boring—it just means being intentional with your ingredients so you can feel your best while celebrating.
