Pumpkin Protein Oatmeal

This oatmeal is creamy, cozy, and everything you love about a pumpkin spice latte!

Ingredients

  • 1/4 cup (59g) "Fairlife" fat free ultra-filtered milk

  • 1/4 cup water

  • 1/4 cup dry (24g) old fashioned oats

  • 2 tbsp (31g) pure pumpkin puree

  • 1/8 tsp cinnamon

  • 5 grams "Ascent" Native Fuel vanilla bean whey protein

  • 1/2 tsp (4g) honey

  • 3 grams walnuts (chopped)

Directions

  1. Bring the milk and water to a boil in a small saucepan over medium heat.

  2. Stir in the oats, pumpkin puree, cinnamon, and a dash of salt. Return to a boil, reduce heat to low, and cook for about 5 minutes (stirring occasionally) or until thickened and creamy.

  3. Remove pan from the heat and stir in protein powder. Top with chopped walnuts, honey, and an extra sprinkle of cinnamon. Breakfast is served!

Notes

  • You can also cook this in the microwave: mix all ingredients (except for protein powder) together in a large heat-proof dish and cook on high for 3-5 minutes or until cooked through and creamy. Stir in the protein powder before serving.

  • This recipe is great for meal prep breakfasts! Multiply the recipe and store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave with an extra splash of water or milk!

  • If you avoid gluten, be sure to select certified gluten-free oats.

  • You can substitute quick-cooking oats for the old-fashioned oats (reduce cooking times accordingly).
